<div>Fusilli Bucati är en pasta som har formen av ett ihåligt skruvat rör. Bucati betyder ihålig och pastan är bronsvalsad &#8220;trafila al bronzo&#8221; som pastan gjordes förr. FusilliBucatil är såsälskarens bästa pasta. Med sin skruvade ihåliga form ta den upp mer sås än vad annan pasta brukar göra. Fusilli Bucati har vuxit fram i området runt Neapel, tomatsåsens förlovade land! Zeta Casa Di Luca Fusilli Bucati passar bra tillsammans med tomatsås med mozzarella. Pastan är tillverkad av det extra fina durumvetet, Kronos som ger pastan extra bra tuggmotstånd och spänst.</p>

<div>2 bröd</p>
<p>1. Blanda alla ingredienser till surdegen och låt stå övertäckt med plastfilm eller ett par timmar i rums-temperatur alternativt i kylskåp över natten.</p>
<p>2. Häll surdegen i en stor bunke och blanda med vatten, salt, honung och olja. Tillsätt vetemjöl och dinkelmjöl och blanda till en jämn och fin deg. Låt jäsa i bunken ca 1 timme, täck bunken med en handduk.</p>
<p>3. Forma degen till två limpor, låt dem jäsa på en plåt ca 45 minuter.</p>
<p>4. Pensla bröden med kallt vatten, grädda längst ner i ugnen i 220 graders ca 40 minuter.</p></div>

<div>4 portionsbitar laxfilé à 60 g<br />
1 paket färdig smördeg<br />
ägg till pensling<br />
200 g philadelphiaost<br />
2 msk fint skuren gräslök<br />
1 msk pressad citronsaft<br />
250 g bladspenat<br />
1 gul lök<br />
salt och malen vitpeppar<br />
smör till stekning<br />
Pommes duchesse:<br />
1 kg mjölig potatis<br />
1 äggula<br />
2 msk neutral olja<br />
salt och malen vitpeppar<br />
Till servering:<br />
kokta grönsaker</p>

<p><strong>1.</strong> Krydda laxfilén med salt och peppar. Skär gräslöken smått och blanda den med philadelphiaost och citronsaft, krydda med salt och peppar. Skala och finhacka löken, koka spenaten och spola av med kallt vatten. Fräs spenaten i smör tillsammans med löken.</p>
<p><strong>2.</strong> Sätt ugnen på 225°. Kavla ut smördegen och skär ut fyra delar. Lägg spenat i bottnen och en laxskiva över, bre philadelphiaröran på laxen. Vik ihop som ett paket och lägg det med skarven nedåt på en plåt klädd med bakplåtspapper. Vispa upp ägget och pensla paketen, baka dem i ugnen i ca 15 minuter.</p>
<p><strong>3.</strong> Pommes duchesse: Koka potatisen väl och ånga av den. Pressa potatisen, tillsätt äggula, olja och kryddor och blanda väl. Spritsa moset på bakplåtspapper på plåt. Baka i ugn 225°, 10–15 minuter. Servera till laxknytena</p>
